Ingredients
  

  • 1 ¾ cups all-purpose flour
  • ¾ cup unsweetened cocoa powder
  • 2 cups granulated sugar
  • 1 ½ tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • 2 large eggs
  • 1 cup buttermilk
  • ¾ cup vegetable oil or melted coconut oil
  • 2 tsp vanilla extract
  • 1 cup shredded coconut sweetened or unsweetened
  • 1 cup semi-sweet chocolate chips

Method
 

  1. Preheat oven to 350°F (175°C). Grease two 9-inch round baking pans and line with parchment paper.
  2. In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  3. In another bowl, beat together eggs, buttermilk, vegetable oil, and vanilla extract until smooth.
  4. Pour wet ingredients into dry ingredients and mix gently until just combined.
  5. Fold in shredded coconut and chocolate chips.
  6. Divide the batter evenly between prepared pans. Bake for 25-30 minutes until a toothpick inserted comes out clean.
  7. Cool in pans for about 10 minutes before transferring to wire racks to cool completely.
