Ingredients
  

Pastry
  • 1 sheet puff pastry thawed if frozen
Filling
  • 8 oz brie cheese cut into small pieces
  • 1/2 cup cranberry sauce store-bought or homemade
  • 1 tbsp fresh rosemary chopped, optional
Topping
  • 1 egg egg beaten for egg wash
  • 1 tbsp honey for drizzling, optional

Method
 

Prepare the Pastry
  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Roll out the puff pastry on a lightly floured surface and cut into 2-inch squares.
Assemble the Bites
  1. Place a piece of brie cheese in the center of each pastry square.
  2. Top each piece of brie with a spoonful of cranberry sauce and a sprinkle of rosemary if using.
  3. Fold the corners of the pastry over the filling and pinch to seal.
Bake
  1. Brush the tops of the pastry bites with the beaten egg.
  2. Bake in the preheated oven for 15 minutes or until golden brown.
  3. Remove from the oven and drizzle with honey if desired.
Serve
  1. Let cool slightly before serving. Enjoy warm!

Notes

These bites can be made ahead of time and frozen before baking. Just add a few extra minutes to the baking time if baking from frozen.
