  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter softened
  • 2 large eggs room temperature
  • 1 tsp vanilla extract
  • 1 cup fresh cranberries
  • 1/4 cup cinnamon-sugar mixture for topping

Method
 

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. In a bowl, whisk together flour, baking powder, and salt, and set aside.
  3. In another bowl, cream the softened butter and sugar until light and fluffy (about 3 minutes).
  4. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract until smooth.
  5. Gradually mix in the dry ingredients until just combined; gently fold in the cranberries.
  6. Transfer batter to the prepared pan and smooth the top.
  7. Sprinkle the cinnamon-sugar mixture over the top.
  8. Bake for 35-40 minutes or until golden brown; check with a toothpick for doneness.
  9. Cool for 10 minutes in the pan before transferring to a wire rack.
