Ingredients
  

  • 3-4 pieces boneless, skinless chicken breasts about 1 pound
  • 6 slices thick-cut bacon
  • 8 oz fettuccine or penne pasta
  • 1 cup heavy cream
  • 3 cloves fresh garlic minced
  • 1 cup freshly grated Parmesan cheese
  • 1 cup fresh spinach optional
  • salt to taste
  • pepper to taste

Method
 

  1. In a large skillet over medium heat, cook diced bacon until crispy. Remove and set aside.
  2. In the same skillet, add cubed chicken seasoned with salt and pepper; cook until golden brown.
  3. Add minced garlic to the skillet and sauté for about one minute before stirring in fresh spinach until wilted.
  4. Lower the heat and pour in heavy cream; stir continuously while adding grated Parmesan cheese until smooth.
  5. Cook pasta according to package instructions until al dente and reserve some pasta water before draining.
  6. Toss cooked pasta with the creamy sauce mixture, using reserved water as needed to adjust the sauce consistency.
  7. Serve hot with extra Parmesan on top.
