Ingredients
  

  • 3 breasts boneless, skinless chicken about 1.5 lbs
  • 2 pieces fresh jalapenos diced
  • 8 oz cream cheese softened
  • 1 cup shredded cheddar cheese
  • ½ cup cooked bacon bits
  • 1 tsp garlic powder
  • ¼ cup green onions chopped
  • 2 tbsp olive oil
  • Salt to taste
  • Pepper to taste

Method
 

  1. Preheat oven to 375°F (190°C) and grease a baking dish with olive oil.
  2. Season chicken breasts generously with salt and pepper.
  3. In a skillet over medium heat, cook bacon until crispy. Add diced jalapenos and garlic powder; sauté until fragrant.
  4. In a bowl, mix cream cheese, cheddar cheese, sautéed jalapenos, green onions, and bacon bits until smooth.
  5. Spread half the mixture in the baking dish, place chicken on top, then cover with remaining mixture.
  6. Bake uncovered for 25-30 minutes until chicken reaches an internal temperature of 165°F (75°C) and cheese is golden brown.
  7. Garnish with extra green onions before serving.
