  • 8 oz fresh cremini mushrooms, sliced
  • 1 cup heavy cream
  • 4 cups low-sodium vegetable broth
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp fresh thyme, chopped
  • Salt & pepper to taste
  • Fresh parsley for garnish

Method
 

  1. Prep ingredients: Chop onions and mince garlic; simmer vegetable broth in a large pot over medium heat.
  2. Sauté onions and garlic: Melt butter in another pot; add onions and cook until translucent (about 5 minutes).

  5. Toss in pasta & seasonings: Add pasta, thyme, salt, and pepper; cook until al dente according to package instructions.
