Method
Cook the Pasta
- In a large pot, bring salted water to a boil. Add rigatoni and cook according to package instructions until al dente.
- Reserve 1/2 cup of pasta water, then drain the pasta in a colander.
Prepare the Beef
- In a skillet, heat olive oil over medium heat. Add ground beef and cook until browned, about 5-7 minutes.
- Add minced garlic and cook for an additional 1-2 minutes until fragrant.
Make the Sauce
- Pour in the heavy cream and chicken broth, stirring to combine. Bring to a simmer.
- Stir in Parmesan cheese and Italian seasoning, mixing until the cheese is melted and the sauce is creamy.
Combine and Serve
- Add the cooked rigatoni to the skillet with the sauce, tossing to coat. If the sauce is too thick, add reserved pasta water as needed.
- Season with salt and pepper to taste, then serve hot, garnished with fresh parsley and additional Parmesan cheese.
