Ingredients
  

  • 2 fillets Salmon Fresh salmon fillets
  • 1 tsp Kosher salt For seasoning the salmon
  • ½ tsp Black Pepper Adds spice to the flavor
  • 12 oz Pappardelle Pasta Or any pasta you want
  • 2 tbsp Unsalted Butter For sautéing garlic
  • 2 cloves Garlic Minced
  • 1 cup Heavy Cream Base of the creamy sauce
  • ½ cup Dry white grape juice Adds sweetness and acidity
  • 1 tsp Grated Lemon Zest Infuses freshness
  • 5 oz Baby Spinach Leaves Adds color and nutrients
  • 2 tbsp Capers Offers a briny burst

Method
 

  1. Preheat your oven to 400°F (200ºC).
  2. Season both sides of salmon fillets with kosher salt and black pepper. Bake for about 12 minutes until tender.
  3. Cook pappardelle pasta according to package instructions until al dente.
  4. Melt unsalted butter in a medium pot over medium heat and sauté minced garlic until fragrant.
  5. Add heavy cream, grated lemon zest, and dry white grape juice to the pot. Simmer until slightly thickened.
  6. Toss in cooked pasta, baby spinach, capers, and flaked salmon. Mix gently and serve immediately.
