Method
- Preheat your oven to 400°F (200ºC).
- Season both sides of salmon fillets with kosher salt and black pepper. Bake for about 12 minutes until tender.
- Cook pappardelle pasta according to package instructions until al dente.
- Melt unsalted butter in a medium pot over medium heat and sauté minced garlic until fragrant.
- Add heavy cream, grated lemon zest, and dry white grape juice to the pot. Simmer until slightly thickened.
- Toss in cooked pasta, baby spinach, capers, and flaked salmon. Mix gently and serve immediately.
