Ingredients
  

  • 1.5 lbs boneless, skinless chicken breasts about 3-4 pieces
  • 4 cloves fresh garlic minced
  • 1 cup oil-packed sun-dried tomatoes chopped
  • 1 cup heavy cream
  • 2 cups fresh spinach
  • 0.5 cup Parmesan cheese freshly grated
  • 2 tbsp olive oil
  • 2 tsp Italian seasoning
  • Salt to taste
  • Pepper to taste

Method
 

  1. Season chicken breasts with salt and pepper. Heat olive oil in a skillet over medium-high heat.
  2. Sear the chicken for 6-7 minutes on each side until golden brown. Remove from skillet and set aside.
  3. In the same skillet, sauté minced garlic and sun-dried tomatoes until fragrant, about 1 minute.
  4. Pour in heavy cream and scrape the skillet bottom to incorporate flavors. Add Parmesan cheese gradually until melted.
  5. Stir in fresh spinach and Italian seasoning; cook until spinach wilts, about 2-3 minutes.
  6. Return the chicken to the skillet, allowing it to simmer in the sauce for another 5 minutes before serving.
