- Season chicken breasts with salt and pepper. Heat olive oil in a skillet over medium-high heat.
- Sear the chicken for 6-7 minutes on each side until golden brown. Remove from skillet and set aside.
- In the same skillet, sauté minced garlic and sun-dried tomatoes until fragrant, about 1 minute.
- Pour in heavy cream and scrape the skillet bottom to incorporate flavors. Add Parmesan cheese gradually until melted.
- Stir in fresh spinach and Italian seasoning; cook until spinach wilts, about 2-3 minutes.
- Return the chicken to the skillet, allowing it to simmer in the sauce for another 5 minutes before serving.
