  • 3 cloves garlic Minced, provides aromatic richness and pungency.
  • 1 small onion Diced, adds sweetness and depth when sautéed.
  • 1/2 cup sun-dried tomatoes Chopped, delivers concentrated tomato flavor with a hint of tanginess.
  • 1/2 cup chicken or vegetable broth Keeps the dish moist and enhances the overall taste.
  • 1 cup heavy cream Creates the creamy texture; coconut cream can be used for a vegan option.
  • 2 cans butter beans 15 oz each, rinsed and drained.
  • 1/2 cup grated Parmesan cheese Or 3 tablespoons nutritional yeast for a vegan version.
  • 1/2 teaspoon red pepper flakes Optional, for heat.
  • 1 teaspoon Italian seasoning A blend of herbs that evokes classic Italian flavors.
  • 1/4 teaspoon salt Adjust to taste.
  • 1/4 teaspoon black pepper Adds subtle warmth and complexity.
  • 1/4 cup fresh basil leaves Chopped, plus extra for garnish.

Method

  1. Begin by heating the olive oil in a large skillet over medium heat. Add the diced onion and minced garlic, cooking until they become translucent and fragrant, about 3-5 minutes.
  2. Stir in the chopped sun-dried tomatoes along with Italian seasoning, allowing them to infuse their flavor into the aromatics for another minute.
  3. Pour in the chicken or vegetable broth followed by the heavy cream; bring this mixture to a gentle simmer while stirring occasionally to combine everything well.
  4. Gently fold in the rinsed and drained butter beans along with Parmesan cheese, stirring until everything is coated in that creamy sauce.
  5. Taste your mixture; season it with salt, black pepper, and red pepper flakes according to your preference before allowing it to cook together for an additional 5-7 minutes until heated through.
  6. Finally, remove from heat and stir in fresh basil just before serving; garnish with extra basil leaves on top for an added pop of color and freshness!
