Method
Prepare the Chicken
- Preheat the oven to 400°F (200°C).
- Pound the chicken breasts to an even thickness using a meat mallet.
Make the Coating
- In a mixing bowl, combine the chopped dill pickles, grated parmesan cheese, panko breadcrumbs, garlic powder, onion powder, black pepper, and salt.
Prepare the Egg Wash
- In another bowl, whisk together the beaten eggs and milk.
Coat the Chicken
- Dip each chicken breast into the egg wash, then coat it with the pickle-parmesan mixture, pressing firmly to adhere.
Bake the Chicken
- Place the coated chicken breasts on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 25-30 minutes or until the chicken is cooked through and the coating is golden brown.
Serve
- Remove from the oven and let rest for a few minutes before serving.
- Serve with extra dill pickles on the side if desired.
