Ingredients
  

Chicken
  • 4 pieces boneless chicken breasts pounded to even thickness
Coating
  • 1 cup dill pickle chips finely chopped
  • 1 cup parmesan cheese grated
  • 1 cup panko breadcrumbs for extra crunch
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon black pepper
  • 1 teaspoon salt
Egg Wash
  • 2 large eggs beaten
  • 2 tablespoons milk

Method
 

Prepare the Chicken
  1. Preheat the oven to 400°F (200°C).
  2. Pound the chicken breasts to an even thickness using a meat mallet.
Make the Coating
  1. In a mixing bowl, combine the chopped dill pickles, grated parmesan cheese, panko breadcrumbs, garlic powder, onion powder, black pepper, and salt.
Prepare the Egg Wash
  1. In another bowl, whisk together the beaten eggs and milk.
Coat the Chicken
  1. Dip each chicken breast into the egg wash, then coat it with the pickle-parmesan mixture, pressing firmly to adhere.
Bake the Chicken
  1. Place the coated chicken breasts on a baking sheet lined with parchment paper.
  2. Bake in the preheated oven for 25-30 minutes or until the chicken is cooked through and the coating is golden brown.
Serve
  1. Remove from the oven and let rest for a few minutes before serving.
  2. Serve with extra dill pickles on the side if desired.

Notes
