Method
Prepare the Mashed Potato Mixture
- In a mixing bowl, combine the mashed potatoes, cheddar cheese, beaten egg, green onions, garlic powder, salt, and pepper. Mix until well combined.
- Chill the mixture in the refrigerator for about 15 minutes to firm up.
Set Up Breading Station
- In one bowl, place the flour. In a second bowl, place the beaten eggs. In a third bowl, combine the breadcrumbs and paprika.
Form and Bread the Puffs
- Using your hands, form small balls (about 1 inch in diameter) from the chilled potato mixture.
- Roll each ball in flour, dip in beaten eggs, and then coat with breadcrumbs. Set aside on a baking sheet.
Fry the Puffs
- In a deep fryer or frying pan, heat the vegetable oil to 350°F (175°C).
- Carefully add the potato balls in batches, frying until golden brown and crispy, about 3-4 minutes per batch.
- Remove with a slotted spoon and drain on paper towels.
Serve
- Serve the crispy mashed potato cheese puffs warm with your favorite dipping sauce.
