Crispy Mashed Potato Cheese Puffs

Deliciously crispy on the outside and creamy on the inside, these cheese puffs made from mashed potatoes are a perfect appetizer or snack.

Ingredients
  

Mashed Potato Mixture
  • 2 cups mashed potatoes prepared and cooled
  • 1 cup shredded cheddar cheese or cheese of choice
  • 1 large egg beaten
  • 1/4 cup green onions chopped
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
Breading
  • 1 cup all-purpose flour
  • 2 large eggs beaten
  • 2 cups breadcrumbs preferably panko
  • 1/2 teaspoon paprika
Frying
  • 4 cups vegetable oil for frying

Method
 

Prepare the Mashed Potato Mixture
  1. In a mixing bowl, combine the mashed potatoes, cheddar cheese, beaten egg, green onions, garlic powder, salt, and pepper. Mix until well combined.
  2. Chill the mixture in the refrigerator for about 15 minutes to firm up.
Set Up Breading Station
  1. In one bowl, place the flour. In a second bowl, place the beaten eggs. In a third bowl, combine the breadcrumbs and paprika.
Form and Bread the Puffs
  1. Using your hands, form small balls (about 1 inch in diameter) from the chilled potato mixture.
  2. Roll each ball in flour, dip in beaten eggs, and then coat with breadcrumbs. Set aside on a baking sheet.
Fry the Puffs
  1. In a deep fryer or frying pan, heat the vegetable oil to 350°F (175°C).
  2. Carefully add the potato balls in batches, frying until golden brown and crispy, about 3-4 minutes per batch.
  3. Remove with a slotted spoon and drain on paper towels.
Serve
  1. Serve the crispy mashed potato cheese puffs warm with your favorite dipping sauce.

Notes

These puffs can be made ahead of time and frozen before frying. Just fry them straight from the freezer, adding a minute or two to the cooking time.
