- Rinse chicken breasts under cold water and pat dry with paper towels.
- Place chicken at the bottom of the crockpot and layer in diced tomatoes, garlic, olive oil, Italian seasoning, salt, and pepper.
- Pour chicken broth over the mixture until it covers half of the chicken breasts.
- Cover and cook on low for 6-7 hours or high for 3-4 hours until chicken shreds easily with a fork.
- About 30 minutes before serving, add chopped basil for freshness.
- Serve hot over noodles or rice and sprinkle with Parmesan cheese.
