Ingredients
  

  • 4 pieces boneless, skinless chicken breasts (about 1.5 lbs)
  • 3 cloves fresh garlic minced
  • 1 can diced tomatoes with herbs (14.5 oz)
  • 2 tsp Italian seasoning
  • 1/4 cup fresh basil leaves chopped
  • 2 tbsp olive oil
  • Salt to taste
  • Pepper to taste
  • 1 cup low-sodium chicken broth
  • 1/4 cup freshly grated Parmesan cheese

Method
 

  1. Rinse chicken breasts under cold water and pat dry with paper towels.
  2. Place chicken at the bottom of the crockpot and layer in diced tomatoes, garlic, olive oil, Italian seasoning, salt, and pepper.
  3. Pour chicken broth over the mixture until it covers half of the chicken breasts.
  4. Cover and cook on low for 6-7 hours or high for 3-4 hours until chicken shreds easily with a fork.
  5. About 30 minutes before serving, add chopped basil for freshness.
  6. Serve hot over noodles or rice and sprinkle with Parmesan cheese.

Notes
