Method
- Place chicken breasts at the bottom of the crockpot.
- Add minced garlic and diced onion over the chicken.
- Cut cream cheese into chunks and scatter on top.
- Pour in diced tomatoes with green chiles and add taco seasoning; stir gently to combine.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- About 30 minutes before serving, sprinkle shredded cheddar on top and cover until melted.
- Serve over rice or tortillas, or enjoy straight from the pot.
