Prepare the Ingredients
- Cut the chicken breasts into bite-sized pieces and set aside.
- Drain and rinse the white beans and corn.
Combine in Crockpot
- In the crockpot, combine the chicken, white beans, corn, chicken broth, ranch seasoning mix, cumin, garlic powder, onion powder, salt, and pepper.
Cook
- Cover and cook on low for 6 hours or high for 3 hours.
Finish the Chili
- Stir in the sour cream until well combined and let it cook for an additional 30 minutes.
Serve
- Serve the chili over cooked rice and top with shredded cheese, cilantro, avocado slices, and lime wedges.
