Ingredients
  

Salad Base
  • 2 cups mixed greens such as spinach, arugula, and kale
  • 1 cup cucumber diced
  • 1 cup carrots shredded
  • 1 cup red bell pepper diced
  • 1/2 cup red cabbage shredded
Crunchy Toppings
  • 1/4 cup sunflower seeds raw or roasted
  • 1/4 cup pumpkin seeds raw or roasted
  • 1/4 cup dried cranberries unsweetened
Dressing
  • 3 tablespoons olive oil extra virgin
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon honey or maple syrup for vegan option
  • 1 teaspoon Dijon mustard
  • 1 clove garlic minced

Method
 

Prepare the Salad
  1. In a large mixing bowl, combine the mixed greens, cucumber, carrots, red bell pepper, and red cabbage.
  2. Toss the salad ingredients together until well mixed.
Make the Dressing
  1. In a small bowl, whisk together the olive oil, apple cider vinegar, honey, Dijon mustard, minced garlic, salt, and pepper until well combined.
Combine and Serve
  1. Drizzle the dressing over the salad and toss to coat evenly.
  2. Top with sunflower seeds, pumpkin seeds, and dried cranberries before serving.
