Ingredients
  

Dough Ingredients
  • 3 cups all-purpose flour plus extra for dusting
  • 1 cup warm water about 110°F
  • 1 packet active dry yeast
  • 1 tablespoon salt
  • 1 tablespoon sugar
Topping
  • 1 tablespoon cornmeal for dusting the baking sheet

Method
 

Prepare the Dough
  1. In a mixing bowl, combine warm water, sugar, and yeast. Let it sit for 5 minutes until frothy.
  2. Add flour and salt to the yeast mixture. Mix until a dough forms.
  3. Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
First Rise
  1. Place the dough in a greased bowl, cover with a kitchen towel, and let it rise in a warm place for 1 hour or until doubled in size.
Shape the Baguettes
  1. Punch down the risen dough and divide it into 4 equal pieces.
  2. Shape each piece into a mini baguette by rolling it into a long, thin loaf.
  3. Place the shaped baguettes on a baking sheet dusted with cornmeal.
Second Rise
  1. Cover the baguettes with a kitchen towel and let them rise for another 30 minutes.
Bake
  1. Preheat the oven to 450°F (230°C).
  2. Make several diagonal slashes on top of each baguette with a sharp knife.
  3. Bake for 15-20 minutes until golden brown and crusty.
  4. Remove from the oven and let cool on a wire rack.

Notes
