Preparation Steps
- Preheat oven to 325°F (160°C) and lightly grease a 9-inch springform pan.
- For the crust, mix graham cracker crumbs, melted butter, and granulated sugar until crumbly. Press into the bottom of the pan.
- In a bowl, beat cream cheese until smooth. Gradually add sour cream and vanilla extract.
- Incorporate eggs one at a time until just blended.
- Pour filling into the crust-lined pan and bake for 50-60 minutes until set around the edges but slightly jiggly in the center.
- Cool completely at room temperature; then chill in the fridge for at least four hours.
- Sprinkle brown sugar evenly over the top and use a kitchen torch to caramelize until golden brown.
