  • 8 oz thick-cut bacon chopped
  • 1 cup dried navy beans soaked overnight
  • 1 medium yellow onion diced
  • 2 medium carrots diced
  • 2 stalks celery diced
  • 4 cloves garlic minced
  • 6 cups low-sodium chicken broth
  • 2 leaves bay leaves
  • to taste Salt
  • to taste Black pepper

Cooking Steps
  1. Rinse soaked beans under cold water and set aside.
  2. In a large pot over medium heat, cook the chopped bacon until crispy. Remove excess fat if desired.
  3. Add diced onion, carrots, and celery to the pot; sauté until the vegetables are softened and onions are translucent.
  4. Stir in minced garlic along with bay leaves, salt, and black pepper; cook for another minute until fragrant.
  5. Add soaked beans and chicken broth; bring to a boil before reducing heat to low. Cover partially with a lid and simmer for 1 to 1.5 hours until beans are tender but not mushy. Stir occasionally.
  6. Taste for seasoning adjustments before serving hot with crusty bread.
