- Place chicken breasts in a pot, cover with water, and boil until cooked through (about 15 minutes). Shred the chicken using two forks.
- In another pot, heat olive oil over medium heat. Sauté onions, carrots, celery, and garlic until fragrant and onions are translucent.
- Add shredded chicken back into the vegetable mixture along with chicken broth and buffalo sauce; stir well.
- Mix in cream cheese until melted and fully incorporated.
- Serve hot with shredded cheddar cheese and green onions on top.
