  • 1 tsp ground cinnamon

  • 2 large eggs (room temperature)
  • 0.5 cups vegetable oil
  • 1.5 cups grated carrots (freshly grated)
  • 0.5 cups chopped walnuts or pecans (optional)
  • 8 oz cream cheese (full-fat) for frosting
  • 2 cups powdered sugar for frosting

Method
 

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.

  3. Add in the eggs and vegetable oil; stir gently until just combined—avoid overmixing.
  4. Fold in the grated carrots and nuts if using; ensure the batter is thick but not dry.
  5. Pour the batter into the prepared loaf pan and bake for 50-60 minutes or until a toothpick inserted comes out clean.
  6. Allow the loaf to cool for 10 minutes in the pan before transferring to a wire rack.
  7. Once completely cooled, prepare the cream cheese frosting by whipping together the cream cheese and powdered sugar until smooth. Frost generously on top of the loaf.
