  • 1 cup plain full-fat Greek yogurt
  • 2 cups fresh spinach, chopped
  • 3 cloves garlic, minced
  • ½ cup grated fresh Parmesan cheese
  • 2 tbsp olive oil
  • 1 tsp dried thyme or oregano
  • Salt and pepper to taste

Cooking Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Spray a baking dish with nonstick cooking spray. Season chicken breasts with salt and pepper on both sides.

  4. Fold in chopped spinach and half of the grated Parmesan cheese.
  5. Place seasoned chicken in the baking dish and spread the yogurt-spinach mixture evenly over each breast.
  6. Bake for 25-30 minutes until the chicken reaches an internal temperature of 165°F (75°C) and is golden brown on top.
