Chicken and Pasta
  • 4 pieces boneless, skinless chicken breasts
  • 12 oz penne pasta
  • 2 cups marinara sauce
  • 3 cups shredded mozzarella cheese
  • 1/2 cup freshly grated Parmesan cheese
  • 2 tsp Italian seasoning
  • 2 tbsp olive oil
  • to taste salt
  • to taste pepper
  • fresh basil optional, for garnish

Method
 

Cooking Instructions
  1. Preheat your oven to 375°F (190°C). Season chicken with salt and pepper and sear in olive oil until golden brown.
  2. Boil water in a large pot and cook penne pasta until al dente (8-10 minutes). Drain and set aside.
  3. In a bowl, mix marinara sauce with Italian seasoning, then combine with cooked pasta.
  4. In a baking dish, layer half the saucy pasta at the bottom. Add chopped chicken and sprinkle half of the mozzarella on top.
  5. Layer the remaining pasta over the chicken, pour on more marinara, and top with remaining mozzarella and Parmesan cheeses.
  6. Cover with foil and bake for 25 minutes; remove the foil and bake an additional 10-15 minutes until cheese is melted and bubbly.
