Ingredients
  

  • 4 pieces boneless, skinless chicken breasts
  • 1 cup fresh spinach leaves
  • 8 oz cream cheese softened
  • 1 cup shredded mozzarella cheese
  • 1/2 cup Panko breadcrumbs
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • Salt to taste
  • Pepper to taste
  • 1 cup marinara sauce for serving

Method
 

  1. Preheat the oven to 375°F (190°C) and spray a baking dish with nonstick cooking spray.
  2. In a bowl, mix together cream cheese, mozzarella cheese, spinach, garlic powder, salt, and pepper until smooth.
  3. Flatten each chicken breast to about half an inch thick using a meat mallet or rolling pin.
  4. Spread the cheesy filling evenly over each chicken breast and roll tightly from one end to the other.
  5. Coat each roll in Panko breadcrumbs mixed with olive oil and place seam-side down in the baking dish.
  6. Bake for 25-30 minutes until golden brown and cooked through (internal temperature of 165°F).
  7. Serve hot with marinara sauce drizzled on top or on the side for dipping.
