  • 4 medium carrots, chopped
  • 4 medium potatoes, chopped
  • 2 medium onions, quartered
  • 2 cups beef broth
  • 4 cloves garlic, minced
  • 2 tsp fresh rosemary, chopped
  • 2 tsp fresh thyme, chopped
  • 2 tbsp olive oil
  • Salt to taste

Method

  5. Season generously with salt, pepper, rosemary, and thyme.
  6. Cover tightly with foil or a lid and roast in the oven for about 3 hours or until fork-tender.
