Ingredients
  

  • 2 lbs chuck roast, cut into 1-inch cubes
  • 2 large yellow onions, chopped
  • 3 carrots, diced
  • 2 stalks celery, diced
  • 4 cloves garlic, minced
  • 1 28 oz can whole peeled tomatoes
  • 4 cups beef broth
  • 2 tsp smoked paprika
  • 2 bay leaves
  • Fresh parsley, chopped for garnish
  • Salt and pepper to taste

Method
 

  1. Prep your ingredients by chopping the vegetables and cubing the chuck roast.
  2. In a large pot, heat oil over medium-high heat. Sear the beef cubes until browned on all sides.
  3. Add chopped onions, garlic, carrots, and celery to the pot. Cook until onions are translucent (about 5 minutes).
  4. Pour in canned tomatoes (crushed by hand), beef broth, bay leaves, and smoked paprika. Bring to a boil.
  5. Reduce heat and let simmer uncovered for at least 1.5 hours until the meat is fork-tender.
  6. Remove bay leaves and stir in chopped parsley before serving.
