- Prep your ingredients by chopping the vegetables and cubing the chuck roast.
- In a large pot, heat oil over medium-high heat. Sear the beef cubes until browned on all sides.
- Add chopped onions, garlic, carrots, and celery to the pot. Cook until onions are translucent (about 5 minutes).
- Pour in canned tomatoes (crushed by hand), beef broth, bay leaves, and smoked paprika. Bring to a boil.
- Reduce heat and let simmer uncovered for at least 1.5 hours until the meat is fork-tender.
- Remove bay leaves and stir in chopped parsley before serving.
