Ingredients
  

  • 2 fillets salmon 6 oz each
  • 1 cup quinoa rinsed
  • 1 cup cucumbers diced
  • 1 cup cherry tomatoes halved
  • 1/4 cup red onion thinly sliced
  • 1 cup tzatziki sauce store-bought or homemade
  • 2 tbsp lemon juice
  • 2 tbsp fresh herbs chopped parsley or dill
  • salt to taste
  • pepper to taste
  • 2 tbsp olive oil

Method
 

  1. Rinse quinoa under cold water. Combine with 2 cups water in a pot; bring to a boil. Reduce heat, cover, and simmer for 15 minutes until liquid is absorbed.
  2. Preheat oven to 375°F (190°C). Season salmon with olive oil, salt, pepper, and lemon juice. Bake on parchment-lined sheet for 15-20 minutes until cooked through.
  3. While salmon bakes, chop cucumbers and halve cherry tomatoes. Thinly slice red onions.
  4. If making homemade tzatziki: mix Greek yogurt with grated cucumber, minced garlic, dill/mint, lemon juice, salt, and pepper.
  5. Assemble bowls: start with quinoa base topped with salmon fillet, veggies, and tzatziki drizzle.
  6. Garnish with fresh herbs before serving.
