  • 4 medium-sized Yukon Gold potatoes
  • 4 tbsp olive oil
  • 1 tsp kosher salt
  • 4 tbsp unsalted butter
  • 2 tsp fresh rosemary or thyme
  • ½ cup grated cheese or breadcrumbs optional

Method
 

  1. Preheat your oven to 425°F (220°C).
  2. Wash and dry the potatoes thoroughly. Place each potato between two wooden spoons to prevent slicing all the way through.
  3. Slice each potato into thin slices about 1/4 inch apart, ensuring they remain intact at the bottom.
  4. Arrange potatoes on a baking sheet lined with parchment paper and drizzle with olive oil, ensuring oil seeps into the crevices.
  5. Sprinkle salt and desired herbs over the potatoes.
  6. Bake for 40-50 minutes until golden brown and crispy on top.
  7. Allow to rest briefly before serving; garnish with optional toppings if desired.
