- Preheat the oven to 375°F (190°C). Cook the manicotti shells according to package instructions until al dente. Drain and lay flat on parchment paper.
- In a bowl, mix ricotta, half of the mozzarella, Parmesan, egg, salt, pepper, basil, and parsley until smooth.
- Fill each manicotti shell with the cheesy mixture using a spoon or piping bag.
- Spread half of the marinara sauce in the bottom of a baking dish. Arrange stuffed manicotti in the dish and cover with the remaining marinara and mozzarella.
- Cover with foil and bake for 25 minutes; remove foil and bake for an additional 10 minutes until golden.

Feel free to swap the ricotta for goat cheese for a tangy flavor or add spinach for nutrition. Store leftovers in an airtight container for up to three days. Reheat covered with foil in a 350°F oven to maintain moisture.
