Method
- Preheat your oven to 425°F (220°C).
- Cut the sweet potatoes into ½-inch thick rounds.
- Toss the sweet potato rounds with olive oil, salt, and pepper.
- Arrange the sweet potato rounds on a baking sheet and roast for 20–25 minutes, flipping halfway through.
- Drizzle warm honey over the roasted rounds and sprinkle with feta, thyme, and red pepper flakes.
- Serve warm on a platter.
