Ingredients
  

  • 2 large sweet potatoes Scrubbed clean before slicing.
  • 2 tablespoons olive oil Helps in roasting and adds flavor.
  • to taste salt For seasoning.
  • to taste pepper For seasoning.
  • 1 tablespoon honey Warmed for drizzling after roasting.
  • cup crumbled feta cheese Adds creaminess and tanginess.
  • to taste fresh thyme leaves Optional, for garnish and added flavor.
  • to taste red pepper flakes Optional, for a hint of heat.

Method
 

  1. Preheat your oven to 425°F (220°C).
  2. Cut the sweet potatoes into ½-inch thick rounds.
  3. Toss the sweet potato rounds with olive oil, salt, and pepper.
  4. Arrange the sweet potato rounds on a baking sheet and roast for 20–25 minutes, flipping halfway through.
  5. Drizzle warm honey over the roasted rounds and sprinkle with feta, thyme, and red pepper flakes.
  6. Serve warm on a platter.
