Ingredients
  

Sweet Potatoes
  • 2 medium sweet potatoes peeled and sliced into rounds
Feta Cheese
  • 1 cup feta cheese crumbled
Honey
  • 3 tablespoons honey for drizzling
Olive Oil
  • 2 tablespoons olive oil for roasting
Salt
  • 1 teaspoon salt to taste
Black Pepper
  • 1 teaspoon black pepper to taste
Fresh Herbs
  • 2 tablespoons fresh herbs such as parsley or thyme, for garnish

Method
 

Prepare Sweet Potatoes
  1. Preheat the oven to 400°F (200°C). Peel and slice the sweet potatoes into 1/4 inch rounds.
Season and Roast
  1. In a mixing bowl, toss the sweet potato rounds with olive oil, salt, and black pepper. Spread them out on a baking sheet in a single layer.
  2. Roast in the preheated oven for 20-25 minutes, flipping halfway through, until they are tender and slightly caramelized.
Add Toppings
  1. Remove the sweet potato rounds from the oven and sprinkle crumbled feta cheese on top of each round.
  2. Drizzle honey over the feta and sweet potatoes.
