Crust
  • 1.5 cups graham cracker crumbs
  • 0.5 cups unsalted butter, melted
  • 0.5 cups granulated sugar
Filling
  • 0.5 cups fresh key lime juice
  • 2 large eggs
  • Zest of key limes from 2 key limes
Garnish

Method
 

Preparation
  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper.
  2. In a medium bowl, mix graham cracker crumbs, melted butter, and sugar until combined. Press firmly into the bottom of the prepared dish to form the crust.
  3. Bake the crust for 10 minutes until golden brown. Allow it to cool slightly.
Filling
  1. In another bowl, whisk eggs and sugar until light and fluffy. Gradually add key lime juice and zest, mixing well until smooth.
  2. Pour the mixture over the cooled crust and return to the oven for another 15-20 minutes, until set but slightly jiggly in the center.
Cooling and Serving
  1. Let cool completely before refrigerating for at least two hours. Cut into squares and serve with whipped cream if desired.
