Preparation
- Preheat oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper.
- In a medium bowl, mix graham cracker crumbs, melted butter, and sugar until combined. Press firmly into the bottom of the prepared dish to form the crust.
- Bake the crust for 10 minutes until golden brown. Allow it to cool slightly.
Filling
- In another bowl, whisk eggs and sugar until light and fluffy. Gradually add key lime juice and zest, mixing well until smooth.
- Pour the mixture over the cooled crust and return to the oven for another 15-20 minutes, until set but slightly jiggly in the center.
Cooling and Serving
- Let cool completely before refrigerating for at least two hours. Cut into squares and serve with whipped cream if desired.
