Ingredients
  

  • 8 oz rotini pasta
  • 2 ears fresh corn grilled
  • 1/2 cup full-fat mayonnaise
  • 2 tbsp freshly squeezed lime juice
  • 1/4 cup chopped fresh cilantro
  • 1 tsp chili powder
  • 1/2 cup crumbled Cotija cheese or feta
  • 1/4 cup diced red onion
  • Salt and pepper to taste

Method
 

  1. Cook the pasta in salted boiling water until al dente. Drain and rinse with cold water.
  2. Grill the corn until charred, about 10 minutes. Let cool before cutting off the kernels.
  3. In a bowl, whisk together mayonnaise, lime juice, chili powder, salt, and pepper.
  4. In a large bowl, combine cooked pasta, corn kernels, red onion, cilantro, and cheese. Pour the dressing over and mix well.
  5. Chill in the refrigerator for at least 30 minutes before serving.
