- Cook the pasta in salted boiling water until al dente. Drain and rinse with cold water.
- Grill the corn until charred, about 10 minutes. Let cool before cutting off the kernels.
- In a bowl, whisk together mayonnaise, lime juice, chili powder, salt, and pepper.
- In a large bowl, combine cooked pasta, corn kernels, red onion, cilantro, and cheese. Pour the dressing over and mix well.
- Chill in the refrigerator for at least 30 minutes before serving.
