  • 1 block silken tofu 14 oz
  • 3 tbsp miso paste white or yellow
  • 4 cups low-sodium vegetable broth
  • 2 scallions thinly sliced
  • 1/4 cup dried wakame seaweed rehydrated
  • 2 cloves garlic minced
  • 1 inch fresh ginger grated
  • 2 tbsp low-sodium soy sauce to taste
  • 1 cup carrots thinly sliced
  • 2 cups fresh spinach

Cooking Process
  1. Chop the scallions and carrots, mince the garlic, and grate the ginger.
  2. In a large pot over medium heat, heat a splash of oil and sauté the minced garlic and grated ginger until fragrant (about 30 seconds).
  3. Add the vegetable broth and bring to a gentle boil.
  4. Whisk in the miso paste until smooth.
  5. Gently cube the silken tofu and add it along with carrots and spinach; simmer until vegetables are tender.
  6. Stir in soy sauce and rehydrated wakame; adjust seasonings to taste.
