- Prep your ingredients by washing and chopping the vegetables and dicing the garlic.
- In a large pot, heat olive oil over medium heat. Sauté onions until translucent (about 5 minutes).
- Add diced chicken and cook until golden brown on all sides (approximately 7 minutes).
- Stir in garlic, bell peppers, chili powder, cumin, and salt; cook for an additional 2 minutes.
- Pour in diced tomatoes with juices and chicken broth; bring to a gentle simmer for about 10 minutes.
- Add kidney beans and let simmer uncovered on low heat for another 15-20 minutes.
