  • 3 cups boneless, skinless chicken breasts
  • 4 cloves fresh garlic, minced
  • 2 medium red bell peppers, chopped
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 4 cups low-sodium chicken broth
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 2 tbsp olive oil
  • Juice of 1 lime

Method
 

  1. Prep your ingredients by washing and chopping the vegetables and dicing the garlic.
  2. In a large pot, heat olive oil over medium heat. Sauté onions until translucent (about 5 minutes).
  3. Add diced chicken and cook until golden brown on all sides (approximately 7 minutes).
  4. Stir in garlic, bell peppers, chili powder, cumin, and salt; cook for an additional 2 minutes.
  5. Pour in diced tomatoes with juices and chicken broth; bring to a gentle simmer for about 10 minutes.
  6. Add kidney beans and let simmer uncovered on low heat for another 15-20 minutes.
