  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup fresh strawberries, chopped
  • ½ cup whole milk
  • ½ cup brown sugar (for streusel)
  • 1 tsp cinnamon (for streusel)

Method
 

  1. Preheat oven to 350°F (175°C) and grease an 8-inch square baking pan.
  2. In a bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, cream softened butter and granulated sugar until light and fluffy (about 3-4 minutes).
  4. Add eggs one at a time while mixing on low speed; scrape down the sides as needed.
  5. Gradually mix in dry ingredients alternately with milk until just combined.
  6. Gently fold in chopped strawberries.
  7. For the streusel topping, mix brown sugar, flour, cinnamon, and cold butter until crumbly.
  8. Pour half the batter into the pan, layer half the streusel on top, add remaining batter, then top with leftover streusel.
  9. Bake for 40-45 minutes until golden brown. Cool for 15 minutes before slicing.
