  • 3 cloves fresh garlic minced
Enchilada Components
  • 4 large flour tortillas
  • 2 cups shredded Monterey Jack and cheddar cheese
  • 1 can green chiles (4 oz)
  • 1 cup sour cream
  • 1 cup low-sodium chicken broth
Sauce Ingredients
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 cup heavy cream
  • 1 unit lime Juice of 1
  • Salt to taste
  • Pepper to taste

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). In a skillet over medium heat, sauté minced garlic until fragrant. Add diced chicken and cook until golden brown.
  2. In another saucepan, combine heavy cream, chicken broth, lime juice, cumin, chili powder, salt, and pepper over medium heat. Stir until thickened (about 5-7 minutes).
  3. Lay out flour tortillas and place chicken filling down the center of each. Roll tightly and place seam-side down in a greased baking dish.
  4. Pour the creamy sauce over the enchiladas and top with shredded cheese. Bake for 20-25 minutes until bubbly and golden.
