  • 1 cup green or yellow split peas
  • 4 cups low-sodium vegetable broth
  • 1 medium onion, finely chopped
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 leaf bay leaf
  • Salt to taste
  • Pepper to taste
  • 4 strips bacon, chopped optional

Preparation
  1. Chop onions, carrots, celery, and mince garlic.
  2. In a large pot over medium heat, add olive oil and sauté onions until translucent. Add garlic and cook for another minute.
  3. Stir in diced carrots and celery; cook for about 5 minutes.
  4. Add rinsed split peas and vegetable broth. Bring to a gentle boil while stirring occasionally.
  5. Add thyme, bay leaf, salt, and pepper. If using bacon, add it now! Simmer for 30-40 minutes until peas are tender.
  6. For a creamier texture, use an immersion blender. Serve warm.
