- Chop onions, carrots, celery, and mince garlic.
- In a large pot over medium heat, add olive oil and sauté onions until translucent. Add garlic and cook for another minute.
- Stir in diced carrots and celery; cook for about 5 minutes.
- Add rinsed split peas and vegetable broth. Bring to a gentle boil while stirring occasionally.
- Add thyme, bay leaf, salt, and pepper. If using bacon, add it now! Simmer for 30-40 minutes until peas are tender.
- For a creamier texture, use an immersion blender. Serve warm.
