  • 0.5 cups white sugar
  • 0.5 cups brown sugar
  • 0.5 cups unsalted butter (softened)
  • 2 large eggs (room temperature)
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 0.25 tsp salt
  • 0.5 cups chopped walnuts (toasted if desired)

Method
 

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.

  4. Beat in the eggs one at a time, followed by the vanilla extract.
  5. In another bowl, whisk together the flour, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet mixture, folding in the mashed bananas and walnuts without overmixing.
  7. Pour the batter into the prepared loaf pan and bake for about 60 minutes or until a toothpick comes out clean.
