Method
 

  1. Preheat your oven to 375°F (190°C) and lightly grease a baking dish with olive oil or cooking spray.
  2. Season both sides of each chicken breast generously with salt and pepper and place them in the prepared baking dish.
  3. Spread a generous amount of pesto over each chicken breast, ensuring they are evenly coated.
  4. If using cheese, sprinkle shredded mozzarella and grated Parmesan over the pesto-coated chicken.
  5. Bake in the preheated oven for 25-30 minutes until the chicken reaches an internal temperature of 165°F (75°C).
  6. Let the chicken rest for a few minutes before serving and garnish with fresh basil if desired.
