- Prepare the chicken by dicing it into bite-sized pieces. Mince the garlic and grate the ginger.
- In a bowl, mix bourbon, soy sauce, brown sugar, garlic, and ginger. Add diced chicken and marinate for at least 30 minutes.
- Heat vegetable oil in a skillet over medium-high heat. Sauté marinated chicken until golden brown and cooked through.
- Remove chicken from the skillet but keep the drippings. Pour in remaining marinade mixed with cornstarch and water to thicken the sauce.
- Return the chicken to the skillet once the sauce has thickened, stirring to coat.
- Serve over rice or noodles, garnished with sliced green onions.
