  • 4 pieces boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves garlic minced
  • 1 tablespoon fresh ginger grated
  • 1/2 cup bourbon whiskey
  • 1/3 cup low-sodium soy sauce
  • 1/4 cup brown sugar
  • 2 tablespoons cornstarch
  • 2 tablespoons vegetable oil
  • 1/4 cup water
  • 2 pieces green onions sliced for garnish

Method
 

  1. Prepare the chicken by dicing it into bite-sized pieces. Mince the garlic and grate the ginger.
  2. In a bowl, mix bourbon, soy sauce, brown sugar, garlic, and ginger. Add diced chicken and marinate for at least 30 minutes.
  3. Heat vegetable oil in a skillet over medium-high heat. Sauté marinated chicken until golden brown and cooked through.
  4. Remove chicken from the skillet but keep the drippings. Pour in remaining marinade mixed with cornstarch and water to thicken the sauce.
  5. Return the chicken to the skillet once the sauce has thickened, stirring to coat.
  6. Serve over rice or noodles, garnished with sliced green onions.
