  • 3-4 breasts boneless, skinless chicken (about 1 pound)
  • 3 cloves fresh garlic minced
  • 1 medium sweet onion chopped
  • 2 medium carrots finely chopped
  • 2 stalks celery finely chopped
  • 1 cup buffalo sauce
  • 4 cups low-sodium chicken broth
  • 8 oz cream cheese
  • 1 cup shredded cheddar cheese (for topping)
  • 2 green onions sliced (for garnish)

Method
 

  1. Place chicken breasts in a pot, cover with water, and boil until cooked through (about 15 minutes). Shred the chicken using two forks.

  3. Add shredded chicken back into the vegetable mixture along with chicken broth and buffalo sauce; stir well.
  4. Mix in cream cheese until melted and fully incorporated.
