  • 4 breasts boneless, skinless chicken (about 1.5 lbs)
  • 6 tomatillos (about 1 lb), husked and quartered
  • 1 cup fresh cilantro chopped
  • 2 jalapeños seeded and chopped
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 4 cups low-sodium chicken broth
  • 2 limes juiced
  • 2 tbsp olive oil
  • 2 tsp ground cumin
  • 2 tsp dried oregano

  4. Stir in cumin and oregano; add chicken broth to cover the mixture.
  5. Bring to a gentle boil, reduce heat to low, cover, and simmer for 30-35 minutes until the chicken is cooked through.
  6. Shred the chicken using two forks and return it to the pot with chopped cilantro and lime juice just before serving.
