Ingredients
  

  • 2 cans canned chickpeas 15 oz each
  • 1 medium yellow onion
  • 3 cloves garlic minced
  • 2 medium carrots chopped
  • 4 cups vegetable broth
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 2 cups fresh spinach or kale
  • 1 Juice of lemon
  • 2 tbsp olive oil

Method
 

  1. Heat olive oil in a large pot over medium heat. Add diced onions and sauté until translucent.
  2. Stir in minced garlic and cook until fragrant, about 30 seconds.
  3. Add chopped carrots and cook until slightly tender, about 3–4 minutes.
  4. Stir in drained chickpeas and vegetable broth; bring to a gentle simmer.
  5. Season with cumin and paprika; let cook for 15–20 minutes for flavors to meld.
  6. Just before serving, add fresh spinach or kale and cook until wilted. Squeeze lemon juice into each bowl before serving.
