Ingredients
  

  • 8 oz flat rice noodles
  • 1 cup bell peppers, sliced (mixed colors)
  • 1 cup broccoli florets
  • 4 cloves garlic, minced
  • 1 cup protein of choice (chicken, shrimp, or tofu)
  • 2 tbsp vegetable oil
  • 3 tbsp low-sodium soy sauce
  • 2 tsp Sriracha (adjust for spice level)
  • 1 tbsp brown sugar
  • 2 tbsp fresh lime juice

Method
 

  1. Prepare the noodles according to package instructions until al dente. Drain and rinse under cold water.
  2. In a large skillet or wok, heat vegetable oil over medium heat. Sauté minced garlic for about 30 seconds until fragrant.
  3. Add your chosen protein along with bell peppers and broccoli to the skillet. Stir-fry for about 5-7 minutes until cooked through.
  4. In a bowl, whisk together soy sauce, Sriracha, brown sugar, and lime juice until well combined.
  5. Add the cooked noodles to the skillet and pour in the sauce mixture. Toss everything together until heated through for about 3-5 minutes.
