Ingredients
  

  • 1 cup long-grain rice
  • 2 tablespoons extra virgin olive oil
  • 1 medium onion, finely chopped
  • 4 cloves garlic, minced
  • 1 cup diced tomatoes
  • 2 cups vegetable or chicken broth
  • 2 tablespoons fresh lemon juice
  • Salt to taste
  • Pepper to taste
  • ¼ cup chopped fresh parsley

Method
 

  1. Heat olive oil in a large saucepan over medium heat. Sauté the chopped onion and minced garlic for 3-5 minutes until fragrant and translucent.
  2. Stir in the long-grain rice, coating each grain with oil. Toast for about 2 minutes until slightly golden.
  3. Add diced tomatoes, broth, lemon juice, salt, and pepper to the pot. Bring to a boil.
  4. Reduce heat to low, cover tightly, and simmer for 15-20 minutes until all liquid is absorbed.
  5. Remove from heat and let stand covered for an additional 5 minutes. Fluff with a fork and garnish with fresh parsley before serving.
