Ingredients
  

  • 1 cup cooked shrimp, peeled and deveined
  • 2 cups day-old cooked jasmine rice
  • 1 cup mixed vegetables (peas, carrots, bell peppers)
  • 2 green onions, finely chopped
  • 2 large eggs, beaten
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp sesame oil
  • 2 cloves garlic, minced
  • 1 inch fresh ginger, grated

Method
 

  1. Gather all your prepped ingredients: shrimp, rice, vegetables, green onions, eggs, garlic, ginger, soy sauce, and sesame oil.
  2. Heat sesame oil in a large skillet over medium-high heat. Add garlic and ginger; sauté for about 30 seconds until fragrant.
  3. Add mixed vegetables and cook for 3-4 minutes until tender.
  4. Stir in the day-old rice and break up clumps while coating with flavors.
  5. Fold in the cooked shrimp until heated through. Create a well in the center and pour in the beaten eggs. Scramble until fully cooked (about 1-2 minutes).
  6. Drizzle soy sauce over the mixture and stir to combine thoroughly.
