- Gather all your prepped ingredients: shrimp, rice, vegetables, green onions, eggs, garlic, ginger, soy sauce, and sesame oil.
- Heat sesame oil in a large skillet over medium-high heat. Add garlic and ginger; sauté for about 30 seconds until fragrant.
- Add mixed vegetables and cook for 3-4 minutes until tender.
- Stir in the day-old rice and break up clumps while coating with flavors.
- Fold in the cooked shrimp until heated through. Create a well in the center and pour in the beaten eggs. Scramble until fully cooked (about 1-2 minutes).
- Drizzle soy sauce over the mixture and stir to combine thoroughly.
