Baking Process
- Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- In a bowl, whisk together flour, baking powder, and salt; set aside.
- In another bowl, beat softened butter and granulated sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition. Then stir in lemon juice, zest, and vanilla extract.
- Gently fold the dry ingredients into the wet mixture until just combined.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 50-60 minutes or until golden brown and a toothpick inserted comes out clean.
- Cool for 10 minutes in the pan before transferring to wire racks. Drizzle with powdered sugar glaze once cooled.
