Vegetables
  • 2 cloves garlic minced
  • 1 medium onion finely chopped
  • 2 cups sweet corn (canned or frozen)
Liquids
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 Juice lime Juice of 1 lime
Spices
  • 2 tsp cumin
  • 2 tsp chili powder
  • ¼ cup fresh cilantro (optional)
  • Salt and pepper to taste

Cooking Instructions
  1. Prep your ingredients by chopping the onions and garlic.
  2. In a large pot over medium heat, sauté onions in olive oil until translucent. Add garlic and cook until fragrant (about 1 minute).
  3. Add diced chicken breasts; cook until lightly browned.
  4. Pour in chicken broth; bring to a gentle boil while stirring occasionally.
  5. Reduce heat to low and stir in corn followed by heavy cream.
  6. Season with salt, pepper, and additional spices as desired. Simmer for about 15 minutes.
  7. Just before serving, add lime juice and cilantro on top.
