Ingredients
  

Cake
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter softened
  • 1 cup milk room temperature
  • 2 large eggs room temperature
  • 1 tsp vanilla extract
Frosting
  • 1 cup heavy cream cold
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract
Filling
  • 2 cups fresh strawberries sliced
  • 2 tbsp granulated sugar for macerating

Method
 

Prepare the Cake
  1. Preheat the oven to 350°F (175°C). Grease and line two 9-inch round cake pans with parchment paper.
  2. In a mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Add the softened butter, milk, eggs, and vanilla extract. Beat with an electric mixer on medium speed for about 2 minutes until smooth.
  4. Divide the batter evenly between the prepared pans.
  5. Bake for 25 minutes or until a toothpick inserted in the center comes out clean.
  6. Allow cakes to cool in the pans for 10 minutes, then transfer to a cooling rack to cool completely.
Prepare the Filling
  1. In a bowl, combine sliced strawberries with granulated sugar. Let sit for 15 minutes to macerate.
Make the Frosting
  1. In a mixing bowl, beat the cold heavy cream with an electric mixer until soft peaks form.
  2. Add powdered sugar and vanilla extract, and continue to beat until stiff peaks form.
Assemble the Cake
  1. Place one cake layer on a serving plate. Spread a layer of frosting on top, then add half of the macerated strawberries.
  2. Top with the second cake layer and spread frosting on top and around the sides of the cake.
  3. Garnish with remaining strawberries on top.
